Plum meringue kisses

    each wine vinegar, vanilla essence and cornflour
  • 4
    egg whites
  • 250
    castor sugar
  • 250
    thick cream
  • 350
    plums, very thinly sliced


Preheat oven to 120 ºC. Line 2 baking sheets with greaseproof or baking paper. Blend vinegar, vanilla and cornflour into a smooth paste. Whisk egg whites in a large bowl until stiff and starting to look dry. Fold in sugar a tablespoon at a time, alternating with a little of the paste, whisking continually until thick and standing in stiff peaks. Spoon 12 blobs of meringue onto prepared baking sheets. Swirl mixture and lift spoon to make peaks. (Don't worry if they're uneven.) Bake for 1 hour, turn off oven and leave to cool in the residual heat. TO FINISH: Whip cream until thick and fold in half the plums. Place 2 meringues on individual plates, top with cream mixture and scatter remaining plums on top.
