500.00 g flour — cake
400.00 g sugar
7.00 ml Bicarbonate of soda
2.00 ml Baking powder
5.00 ml cinnamon — ground
2.00 ml cloves — ground
2.00 ml allspice — ground
300.00 ml
100.00 ml water
2.00 eggs — extra-large
200.00 ml raisins — seedless
100.00 ml pecan nuts — chopped

Method:

Combine all ingredients in a large bowl in the order listed and pour cake mixture into a greased and lined 27 x 23 cm roasting pan.
Bake at 170 ºC for 30 minutes on bottom shelf of oven, or until a skewer inserted in centre comes out clean.
Cool and cut into squares. Dust with a little icing sugar.
TOTAL KILOJOULE COUNT: 21 865 kJ (5 225 Cal). A portion: 3 645kJ (870 Cal).
