Plum and pear mustard

    plums, stoned and skinned
  • 3
    pears, cored and skinned
  • 125
    ml
    vinegar (white wine vinegar for yellow plums and red wine vinegar for red plums)
  • 45
    ml
    fruit juice mixture (pear, grape and peach juice)
  • 250
    ml
    sugar
  • 3
    whole cloves
  • 5
    ml
    cardamom
  • 2
    ml
    ground cinnamon
  • pinch salt
  • 1
    lemon, rind
  • 60
    ml
    Dijon mustard
 

Method

 
Purée fruit and place in a saucepan. Add the vinegar, fruit juice, sugar and seasonings, except the mustard. Heat slowly while stirring continuously until the sugar has dissolved. Simmer gently until the mixture has thickened. Add the mustard, discard the whole spices and puré;e again in the food processor if you prefer a smooth mustard. Makes about 250 ml.
