    bulgur wheat

    chopped parsley
  • 25

    chopped mint
  • 30

    lemon juice

    olive oil
  • salt and milled black pepper

    small spring onions, chopped
  • 1
    red onion, diced
  • 340
    g
    baby corn, drained
  • 250
    g
    fresh plums, stoned and chopped
  • 1
    ripe, firm mango, peeled and diced
  • 75
    g
    barley
 

Method

 
Cover bulgur wheat with cold water and soak for 15 minutes. Chop parsley and mint and place in a salad bowl with lemon juice, oil, salt and pepper. Add spring onions, red onion, drained corn, plums and mango. Drain bulgur wheat, add to salad and toss with barley, which has been boiled for 15 minutes and drained.
