Pizza topping 1: caramelised onions, sultanas and feta cheese

Ingredients (8)

30.00 ml butter
2.00 red onions — large, sliced
30.00 ml brown sugar — soft
80.00 ml sultanas — golden
quantity pizza dough (see recipe for basic pizza crust)
15.00 ml fresh sage — chopped
2.00 feta cheese — crumbled
sea salt and freshly ground black pepper
30.00 ml olive oil — or fresh sage, to garnish

Method:

Preheat the oven to 220 ºC.
Melt the butter in a fairly large, heavy-bottomed saucepan, add the onions and stir-fry for 5 minutes over high heat.
Add the sugar and sultanas, reduce the heat and simmer for about 10 minutes until the onions start to caramelise. Add the chopped sage and season well with salt and black pepper.
Choose your preferred pizza base and prepare as described for the basic pizza crust recipe. Bake for about 5-7 minutes, depending on the thickness of the base, until the base just begins to brown and has risen well. Remove from the oven and arrange the onion mixture on top, followed by a sprinkling of feta cheese. Bake for another 5-7 minutes until the cheese is lightly browned and the crust golden and done.
Meanwhile rapidly crisp the sage leaves in heated oil. Garnish the pizza with sage leaves when done and serve immediately.
