Pizza-style jackets

Ingredients

    large baking potatoes, washed
  • salt
  • 2
    cloves garlic, crushed
  • 15
    ml
    olive oil
  • 8
    sun-dried tomatoes, drained
  • 60
    ml
    torn basil leaves
  • freshly ground black pepper
  • 450
    g
    mozzarella
 

Method

1 hour 10 minutes
 
1. Pierce potatoes with a fork, then place each one on a piece of foil. Sprinkle with salt and garlic and drizzle with oil. Seal closed and bake in a preheated oven at 200 ºC for 1 hour. 2. Meanwhile, mix together the tomatoes, basil and seasoning. 3. Remove potatoes from the oven, open the aluminium foil and allow to cool for 5 minutes. Cut mozzarella into 8 slices. Make 4 deep cuts in each potato and fill alternately with a slice of mozzarella and the tomato mixture. 4. Return potatoes to oven for 10 minutes until the mozzarella has melted. Serve hot with a side salad for a light lunch, or with a piece of grilled meat or chicken for a more substantial meal.
