    butter

    medium onions, grated

    green peppers, chopped

    creamed sweetcorn

    medium gherkins, chopped

    brown sugar
  • 15

    cornflour
  • salt and pepper
  • 1
    packet instant spaghetti sauce mix
  • 70

    tomato paste
  • 150
    ml
    brown vinegar
  • 400

    whole peeled tomatoes, drained and juice reserved
  • 12
    ml
    dried origanum
 

Method

 
1. Melt butter in a large frying pan. Add onions and chopped green peppers, simmer until tender. Stir in sweetcorn and gherkins. 2. Mix together sugar, cornflour, salt and pepper, spaghetti sauce mix, tomato paste, vinegar and reserved tomato juice. Stir in origanum. 3. Chop canned tomatoes and stir into the sweetcorn/onion mixture. 4. Heat sauce mixture until it begins to thicken. Add this to above mixture. 5. Cook on a low heat for 20 to 30 minutes. 6. Bottle and leave to cool. These ingredients should make up to 2 kg bottles of topping. Store in the refrigerator.
