Put the yeast in the warm water with a pinch of flour and allow it to bloom
Mix it in with the 2 cups of flour and knead adding the 3rd cup as you knead the dough. Kneed in the olive oil and salt.
Place in an oiled bowl and cover. Allow to rise.
Once the dough has risen, knead it again (punch down) to knock out the air bubbles.
Divide it into the number of portions you need. (If you are freezing the dough this is when you do it).
Roll each piece out to the desired size on a floured surface using a rolling pin. Top with tomato base and your choice of toppings.
Bake in a very hot oven for 10 - 15 minutes.
