  • 840
    g
    cake flour
  • 15
    ml
    salt
  • 25
    ml
    sugar
  • 10
    g
    instant yeast
  • 50
    ml
    oil
  • 500
    ml
    lukewarm water
 

Method

 
Combine the flour, salt and sugar.
Add the instant yeast.
Make a well in the flour mixture and add the oil and water simultaneously.
Knead well for about 10 minutes until the dough is smooth and elastic.
Cover and leave to rise for a few minutes until double in bulk.
Punch down and divide into about 15 uniform pieces.
Roll the pieces of dough into balls and, using a rolling pin, roll out each ball into a 5 mm thick circle.
Arrange the pittas on greased baking sheets and cover once more.
Leave to rise for 15 to 20 minutes.
Meanwhile preheat the oven to 220 °C.
Bake the pittas for 10 minutes or until puffed out and done.
Leave to cool until lukewarm before filling.
