    wholewheat flour

    ml
    salt
  • 5
    ml
    instant yeast
  • 15
    ml
    castor sugar
  • 10
    ml
    olive oil
  • 150
    ml
    hot water
 

Method

 
Mix the dry ingredients together and add the olive oil and just enough hot water to form a stiff dough. Knead until smooth and elastic. Place in a bowl and cover with plastic wrap. Leave to rise in a warm place until doubled in volume.

Heat the oven to 200 ºC (400 ºF).

Gently knead the dough down and divide into 8 bite-size balls. Roll into rounds about 5 cm in diameter and place on a greased baking sheet. Bake for about 8-10 minutes or until puffed out and baked through. (Place a dish filled with water in the oven while baking the pita breads as this makes them puff out even more.)

Serve with souvlaki and tzatziki.
