Pistachio Dukkah

Ingredients

  • 100
    g
    shelled pistachios
  • 50
    g
    sesame seeds
  • 1
    tsp
    ground coriander
  • 1/2
    tsp
    ground cumin
  • 1/2
    tsp
    salt
  • 1/4
    tsp
    black pepper corns
  • 1/4
    tsp
    ground cinnamon
  • 1/4
    tsp
    mixed spice
 

Method

Toast the sesame seeds and pistachios over a medium high heat in a dry pan until the sesame seeds turn a golden brown.

Remove from the heat and place in a food processor with all the other ingredients.

Pulse until you have a reasonably rough mix.

You do not want it powdery and I like to see chunks of pistachio and whole sesame seeds in the mix.

Store in an airtight container for up to 3 months.
