Pistachio and cranberry cheese roll

    cream cheese
  • 250

    finely grated white Cheddar
  • 75

    pistachio nuts, finely chopped
  • 15
    ml
    sesame seeds
  • 75
    g
    dried cranberries, finely chopped
  • fresh or roasted fruit, to serve
  • crackers, to serve
  • dark chocolate or chocolate truffles, to serve
 

Method

00:20 + refridgeration time
 
Mix the two cheeses together and then refrigerate for about two hours, or until firm.
Toast the nuts and seeds and leave to cool, then mix them together with the cranberries. Spread out into a flat dish.

Put the cheese onto a piece of wax paper and shape it into a log. Roll the log in the nut mixture to coat it. Wrap it in another piece of wax paper and chill until firm.
Serve the cheese roll sliced accompanied by fruit, crackers and chocolate, or as part of a cheese platter.
