Piquant yoghurt and chicken salad

  • DRESSING
  • 150
    g
    plain low-fat yoghurt
  • 2
    ml
    salt
  • pinch pepper
  • 2
    ml
    curry powder
  • pinch ground ginger
  • SALAD
  • 1
    green pepper, finely chopped
  • 1
    small onion, finely chopped
  • 2
    stalks celery, chopped
  • 30
    g
    black grapes, halved and seeded
  • 2
    pieces cooked chicken, skinned and finely chopped
  • 50
    g
    bran cereal
  • 4
    lettuce leaves
 

Method

 
Blend the yoghurt, salt, pepper, curry powder and ginger. Combine the remaining salad ingredients, but set aside some of the bran cereal and lettuce leaves. Pour the salad dressing mixture over the salad. Mix well, cover and chill until just before serving. Serve on lettuce leaves with a sprinkling of bran cereal. Serves 2.
