Piquant sesame twists

    freshly cooked, finely mashed potatoes

    softened butter
  • 180
    g
    cake flour
  • salt and milled pepper
  • 2
    ml
    chilli flakes
  • 1
    egg, beaten
  • sesame seeds to decorate
 

Method

 
Place lump-free mashed potatoes in a bowl. Beat in soft butter and mix thoroughly. Slowly work in flour, adding generous sprinklings of salt and pepper as you work, then add the chilli. When dough is smooth, chill for about 1 hour. Roll out on a floured surface. Brush with beaten egg and sprinkle with sesame seeds. Cut into thin sticks. Twist each one or leave as it is and bake at 220 ºC for 10 minutes, or until golden brown. Cool on a wire rack.
