Piquant couscous salad

    ml
    couscous
  • 250
    ml
    water
  • 125
    ml
    white wine
  • salt and freshly ground black pepper
  • 2
    red peppers, finely chopped
  • 2
    red onions, finely chopped
  • 20
    g
    flat-leaf parsley, finely chopped
  • 20
    g
    fresh mint, finely chopped
  • 60
    ml
    olive oil
  • 1
    large lemon, juice
 

Method

 
Place the couscous in a large bowl.
Bring the water and white wine to the boil and pour over the couscous.
Leave until all the liquid has been absorbed.
Fluff with a fork, then microwave for 2 minutes.
Fluff once more with a fork to separate the grains.
Season with salt and pepper and add the vegetables and herbs.
Beat the olive oil and lemon juice together and pour over the salad.
Mix and leave to stand for about 1 hour to allow the flavours to develop.
