Pink salmon and vodka pasta

    spaghettini
  • olive oil for frying

    onion, finely chopped
  • 30
    ml
    chopped fresh dill
  • 30

    vodka (optional)
  • 190

    cream
  • salt and milled black pepper to taste
  • 200
    g
    (or nearest size) pink salmon, drained
  • 10
    ml
    chopped fresh dill
 

Method

 
Cook pasta according to packet instructions. Meanwhile, heat olive oil and gently sauté onion until soft and translucent, about 5 minutes. Do not allow to brown. Add fresh dill (or use 10 ml (2 tsp) dried), vodka and cream and heat through. Season to taste. When pasta is ready, drain and drizzle lightly with olive oil and season with black pepper. Reheat sauce, break salmon into chunks and very gently stir into sauce. Add extra dill and serve on pasta with freshly grated Parmesan cheese and a cucumber salad on the side.
