Pink-peppercorn fillet

    fillet (800g)
  • olive oil
  • 75
    pink peppercorns
  • lightly crushed salt to season


1. Preheat the oven to 200°C. Rub the fillet with the oil and sprinkle over the peppercorns.
Lightly press down the peppercorns to secure them, and season with salt. If necessary, tie the fillet with a length of string. Heat a frying pan over a high heat. Fry the fillet for one to two minutes per side or until golden brown. Place the meat on a baking tray and roast in the oven for about 10 minutes for medium.
