450.00 g flour — white bread
10.00 ml salt
10.00 ml Superbake Instant Yeast
275.00 ml water — warm
15.00 ml peppercorns — pink, cracked
10.00 ml dried basil
45.00 ml fresh chillies — 573
30.00 ml sea salt

Method:

Sift flour into bowl, add salt and yeast. Make a well in the centre and add water. Mix to combine, then add crushed peppercorns, basil and olive oil. Mix to form a smooth dough.
Knead dough for 5 minutes, until soft and elastic, then place in a bowl and cover with clingwrap and leave to rise until doubled in size.
Place the dough on a lightly floured surface and knead again for two minutes. Divide dough into 25 balls and roll out to form thin stick shapes
Place on a greased baking sheet. Cover with a dish cloth and leave to rise again until doubled in size. Brush lightly with a little extra olive oil and sprinkle with coarse salt.
Bake in a preheated 220 176;C oven for 10-12 minutes and cool on wire rack.
