Pineapple sweet potatoes

    sweet potatoes, peeled and sliced
  • 440
    pineapple chunks
  • 5
    ground cinnamon (or 2 whole cinnamon sticks broken in half)
  • 2
    ground ginger (or a 1 0.5 cm piece)
  • pinch salt
  • butter


Preheat the oven to 180 ºC and spray a small ovenproof dish with lid with non-stick spray or grease lightly. Blanche the sweet potato slices in boiling water and drain. Drain the pineapple chunks but reserve the syrup. Arrange the sweet potato slices and pineapple chunks in layers in the prepared dish. Heat the pineapple syrup and add the cinnamon, ginger and salt. Pour over the sweet potato slices and dot with knobs of butter. Cover and bake until the sweet potatoes are tender and serve as a side dish. Serves 4-6.
