Ingredients (8)

140.00 g flour — cake
2.00 ml Bicarbonate of soda
salt — pinch
140.00 g brown sugar — soft
110.00 g butter — softened
80.00 g oats
440.00 g pineapple — crushed, tinned
75.00 g sultanas

Method:

Preheat the oven to 180ºC (350 ºF). Spray a baking sheet with non-stick spray.
Sift the cake flour, bicarbonate of soda and salt together and add the brown sugar. Mix well. Rub in the butter and add the oats. Mix well.
If the pineapple is not very finely crushed, process it in the food processor. Drain well. Add the pineapple and sultanas to the flour mixture and mix. Add about 75 ml of the pineapple juice and mix to form a stiff dough. Press into the prepared baking sheet and bake for 20-25 minutes or till done and golden brown on top. Cool slightly in the baking sheet before cutting into squares. Cool completely and sprinkle with castor sugar. Store in an airtight container.
Makes about 54 squares.
