Pineapple soufflé

    egg whites
  • 125
    ml
    castor sugar
  • pinch salt
  • 4
    small queen pineapples, hollowed out and tops discarded
  • 250
    ml
    grated pineapple flesh, grated, with juice squeezed out
  • 5
    ml
    grated fresh ginger
 

Method

 
Preheat oven to 200 ºC. Place egg whites, sugar and salt in a large bowl. Beat with an electric beater until they hold a stiff peak - take care not to overbeat. Gently fold in pineapple and ginger. Spoon mixture into pineapple shells. Place on a baking sheet and bake for 10 minutes, or until lightly browned on top. Serve immediately.
