A refreshingly cool homemade juice, great for hot days or as a mixer.

Ingredients (3)

2 pineapple
1 l water
1 cup sugar

Method:

Peel the
pineapples quite thickly and freeze the peels.

Put the
pineapple peels in a pot with water and sugar or sweetener to suite your taste.

Boil
slowly for about an hour or until you can actually smell the pineapple.

Leave to
cool in the pot.

Pour off
the juice and dilute to taste with iced water for a fresh, cold beverage.

 

Chef
notes:
Add either ginger, cloves, mint, aniseed, lime or orange peel or chilli
to the boiling water for varied flavours. Use less water and create a sweet
pineapple base to use in cocktails. Serve cold.
