Pineapple bake

    cake flour

    baking powder
  • 5
    ml
    grated nutmeg
  • pinch salt

    butter, cut into pieces
  • 250
    g
    brown sugar
  • 2
    small pineapples, grated
  • 1
    large egg
  • 5
    ml
    bicarbonate of soda
  • 250
    ml
    granadilla yoghurt
 

Method

 
Sift flour, baking powder, nutmeg and salt together into a bowl. Rub in butter. Add sugar and grated pineapple. Beat egg, bicarbonate of soda and yoghurt together lightly and add to flour mixture. Stir to make a batter and pour into a well greased 500 g loaf pan. Bake at 180 ºC for 50 minutes, or until loaf recedes from sides of pan. Remove from oven and cool for 10 minutes. Remove from pan and serve immediately, sliced, with vanilla custard or with whipped cream and fresh fruit.
