Pineapple and sesame chicken

    chicken pieces

    sesame oil

    pineapple chunks in natural juice
  • 5
    chopped fresh ginger
  • 65
    light soy sauce
  • 15
    brown sugar
  • salt and milled pepper
  • sesame seeds
  • fresh coriander to garnish


Rub chicken with sesame oil and place in an ovenproof dish. Drain pineapple chunks and set aside, reserving juice. Add ginger, soy sauce, brown sugar and seasoning to half the reserved juice. Pour mixture over chicken and bake at 180 ºC for 30 minutes. Toss pineapple chucks and remaining juice (if necessary) into chicken mixture and bake for a further 10 minutes. Sprinkle sesame seeds over and bake for a further 5 to 10 minutes. Serve garnished with fresh coriander.
