Ingredients (5)

4.00 oranges
1.00 pineapple — peeled
1.00 Litres water
orange — juice only
3.00 kg white sugar

Method:

Coarsely grate the peel of the four oranges and finely chop the rest of the fruit. Coarsely grate the pineapple and place in a medium-sized saucepan along with the orange peel and flesh. Add the water, bring to the boil and simmer for 20 minutes. Cover and leave overnight. Add the orange juice the following day and bring to the boil. Remove from the stove, add the sugar and stir over low heat until the sugar has dissolved. Increase the heat and boil the marmalade rapidly for 35 minutes until thick and no longer watery. Spoon into sterilised glass jars and seal.
Makes 2 litres marmalade.
