Pineapple and ginger filling

  • 300
    ml
    finely grated fresh pineapple
  • 15
    ml
    finely grated fresh ginger
  • 4
    cardamom seeds, slightly crushed
  • 90
    ml
    brown sugar
  • 125
    ml
    clear pineapple or apple juice
  • 20
    ml
    cornflour
  • extra sugar and ginger if desired
  • 250
    ml
    cream, stiffly whipped
  • 1
    batch wholewheat puffs (see recipe)
  • chocolate powder or icing sugar
 

Method

 
Bring the pineapple, ginger, cardamom seeds, brown sugar and juice to the boil in a saucepan.
Reduce heat and simmer until the mixture has reduced and the pineapple is soft and cooked.
Thicken the mixture with a paste made with the cornflour and a little cold water.
Add extra sugar and ginger if desired.
Cool well and gently fold in the cream.
Fill the puffs with the mixture and dust with chocolate powder or icing sugar before serving.
