If you’re using a fire then grill the pineapple on the grid until both side are well browned. If you’re not using a fire then brown the pineapple in a hot skillet.
While the pineapple is cooking, chop your tomato, onion, coriander and juice the lime.
When the pineapple is done, remove from the heat and let cool on a plate retaining any juice that runs out of the pineapples.
When cool, chop the pineapple finely and discard the core.
In a bowl mix together the chopped pineapple (with any juice), tomato, onion, coriander and lime juice.
