Pimms in ginger syrup

Ingredients

  • 350
    ml
    sugar
  • 400
    ml
    water
  • 1
    piece
    4 cm piece fresh ginger, grated
  • 40
    ml
    Pimms
  • 30
    g
    crushed ice
  • 100
    ml
    soda water
 

Method

 
Heat the sugar, water and ginger over low heat, stirring until the sugar has dissolved. Bring to the boil and simmer for 5 minutes. Remove from the heat and leave to cool. Chill in the refrigerator. Pour the ginger syrup into cocktail glasses to 1/3 full. Add the same quantity of Pimms and crushed ice. Top up with soda water.
