Ingredients (9)

4.00 potatoes — peeled, diced
1.00 onion — sliced
oil
2.00 tomatoes — medium, peeled
410.00 g pilchards in tomato sauce
30.00 ml mayonnaise
10.00 ml fresh basil
salt
freshly ground black pepper

Method:

Boil the diced potato in a little salted water until soft. Drain and set aside. Sauté the onion in a little oil until soft.
Add the tomatoes and simmer until soft.
Add the pilchards and mayonnaise and season with basil. Blend well.
Add the diced potato, season to taste with salt and pepper and warm until heated through.
Serve with toast and a green salad.
