Pilaf of dates, rice and lentils

    butter
  • 1
    cinnamon stick
  • 1
    small onion, finely chopped
  • 500
    g
    long-grain rice, well-rinsed and cooked
  • 250
    ml
    green lentils, well-rinsed and cooked
  • 250
    g
    fresh dates, pips removed and chopped
  • 125
    g
    dried apricots, sliced
  • 60
    g
    almonds, chopped
  • 90
    g
    dried currants
 

Method

 
In frying pan, melt half the butter and add cinnamon and onion. Cook over medium heat until onion is soft and translucent. Melt remaining butter in a saucepan and add 625 ml (2 1/2 cups) warm water. In a large saucepan, mix onion mixture, butter mixture and remaining ingredients, stirring to combine. Cover and cook over lowest possible heat for 1 hour. Do not remove lid. Remove from heat and allow to stand for 15 minutes before serving. Serves 8.
