A crowd pleaser, phyllo-wrapped feta with honey is fantastic served as a starter with a few baby salad leaves.

Ingredients (6)

500 g feta cheese
6 phyllo pastry
1 olive oil — extra virgin, for brushing
100 ml honey
1 handful sesame seeds
1 handful fresh mint — to garnish

Method:

Cut feta into 1cm-thick slabs.

Brush each phyllo pastry sheet with olive oil and then wrap each square of feta in a pastry sheet.

Heat 4cm vegetable oil in a pan and deep-fry squares until golden all over.

Drain on kitchen paper.

Serve drizzled with honey and scattered with sesame seeds and mint leaves.
