  • 4
    sheets
    phyllo pastry
  • sunflower oil
  • FILLING
  • 500
    g
    butternut, peeled, cooked, well drained and mashed
  • 30
    ml
    chopped fresh coriander
  • 5
    ml
    ground cumin
  • 150
    g
    crumbled feta cheese
 

Method

 
FILLING: Mix all ingredients well. Cut pastry into 7 cm squares. Place on a flat, dry surface and brush lightly with oil. Top half the squares with a second square of pastry, at a slight angle, place 5 ml (1 tsp) filling in centre of each and pinch sides up to secure. Deep fry briefly in hot oil, or until golden brown.
