Pesto chicken

    chicken breast fillets
  • 125
    black olive pesto (see recipe)
  • 6
    potatoes, cut into eighths
  • 45
    olive oil or canola oil
  • 45
    grated Parmesan cheese


Preheat oven to 180 ºC. Place chicken breasts in a baking dish and spread olive pesto over breasts. Coat potatoes in oil and then Parmesan cheese. Place in baking dish with chicken. Bake for 15 to 20 minutes, or until chicken is cooked. If potatoes still require cooking, remove chicken and keep warm until potato wedges are cooked.
