Peri-peri chicken and chorizo burgers

Ingredients

    chicken breast fillets
  • 1/2
    cup
    rosé wine
  • 3
    garlic cloves crushed
  • 2
    green chillies, chopped
  • 2
    bay leaves
  • 1
    Tbs
    butter
  • 1
    Tbs
    olive oil
  • 100
    g
    chorizo, thinly sliced
  • 350
    g
    mixed tomatoes (we used Woolworths exotic mix)
  • 4
    Portuguese rolls, toasted
 

Method

Place chicken breasts in a shallow dish, pour over wine, add garlic, chilli and bay leaves. Season well, cover and allow to stand for 30 minutes.

Heat a pan until hot, add butter and oil, allow to melt. Add chorizo; cook until crispy and brown. Remove and set aside. Add chicken breasts to pan, reserving marinade. Cook for 5 min on each side or until cooked through; add the marinade and tomatoes, bring to a boil, then simmer for two minutes.

Place chicken breasts on rolls, top with chorizo, spoon over marinade and tomatoes. Serve with chips.
