Peri-Peri Turkey Steaks

    Marinade: red chillies, seeded and sliced

    Turkey: turkey steaks

    olive or sunflower oil for brushing

    salt and freshly ground black pepper

    Coconut Milk Basmati Rice: water
  • 250

    basmati rice
  • 250
    ml
    coconut milk
  • 10
    ml
    salt
  • 3
    red chillies, seeded and sliced
  • 30

    roughly torn fresh coriander

    onion, roughly chopped and browned
 

Method

Marinade Blend all the ingredients for the marinade and chill until needed.

Turkey Marinate the meat for 30-60 minutes. Remove from the marinade and brush with oil. Season to taste with salt and pepper and grill on both sides over hot coals until brown all over. Do not overcook otherwise the meat will be dry. Brush frequently with the marinade during cooking.

Coconut Milk Basmati Rice Bring the water to the boil, add the rice and cook covered until nearly soft. Drain and rinse the rice under running water. Bring the coconut milk and salt to the boil, add the rice and continue cooking until the rice is done and the liquid has been absorbed. Stir in the remaining ingredients. Spoon a little rice onto a plate or into a shallow bowl, top with a slice of meat and garnish with fresh coriander.
