Ingredients (13)

Marinade: red chillies, seeded and sliced
2.00 cloves garlic — cloves, crushed
10.00 ml fresh coriander — chopped
40.00 ml soy sauce
100.00 ml sweet chilli sauce
50.00 ml lemon juice
Turkey: turkey steaks
60.00 ml olive oil — or sunflower oil
5.00 ml sea salt and freshly ground black pepper
Coconut Milk Basmati Rice: water
250.00 ml rice — basmati
250.00 ml coconut milk
10.00 ml salt
3.00 red chilli — deseeded and sliced
30.00 ml fresh coriander — chopped
1.00 onion — chopped, fried

Method:

Marinade Blend all the ingredients for the marinade and chill until needed.

Turkey Marinate the meat for 30-60 minutes. Remove from the marinade and brush with oil. Season to taste with salt and pepper and grill on both sides over hot coals until brown all over. Do not overcook otherwise the meat will be dry. Brush frequently with the marinade during cooking.

Coconut Milk Basmati Rice Bring the water to the boil, add the rice and cook covered until nearly soft. Drain and rinse the rice under running water. Bring the coconut milk and salt to the boil, add the rice and continue cooking until the rice is done and the liquid has been absorbed. Stir in the remaining ingredients.
Spoon a little rice onto a plate or into a shallow bowl, top with a slice of meat and garnish with fresh coriander.
