Ingredients (13)

175 g flour
30 ml sugar
1 pinch salt
125 g butter — cold, cubed
1 egg yolk — lightly beaten
30 ml water
FILLING:
185 g butter
45 ml castor sugar
100 ml Goldcrest Pure Honey
200 g pecan nuts — chopped
4-5 pears — quartered
60 ml smooth apricot jam
30 ml lemon juice

Method:

Preheat the oven to 180°C and grease a springform pie tin.

Prepare the pastry:
Mix the flour, sugar and salt. Rub in the butter with your fingers, then add the egg yolk and mix through. Add the water and knead to form a stiff dough, with not too much water. Flatten the dough, cover in clingwrap and refrigerate for about an hour.

Roll out the dough on a floured surface, press it into the pie tin and prick the dough with a fork. Blind-bake for 10-15 minutes.

Prepare the filling:
Melt the butter, castor sugar and honey in a saucepan, making sure that all the sugar has dissolved before you bring the mixture to the boil. Simmer for a few minutes until golden brown and remove from heat. Add the pecan nuts, mix well and allow to cool slightly before pouring into the pie case. Arranged the sliced pear on top. Mix the apricot jam and lemon juice and brush over the pears, then bake the tart for about 30 minutes or until golden brown. Serve with whipped cream.
