Use 125-175 g of potatoes per person. Peel potatoes and cut into large, even-sized chips.
Rinse under cold water to remove excess starch. Drain and dry well.
Half-fill a saucepan with oil and heat until oil is medium hot (190 ºC). Lower chips into the oil and fry for 5 minutes. Remove chips from the oil and drain on absorbent paper.
Increase heat of oil to hot (200 ºC). Return chips to the oil and fry for 2-3 minutes until golden and crisp.
