Peppermint satin

    ml
    fresh cream
  • 397
    g
    Nestlé condensed milk
  • 15
    ml
    gelatine
  • 50
    ml
    orange juice
  • 80
    ml
    sherry
  • 20
    ml
    peppermint liqueur
  • 1
    peppermint crisp, crumbled
  • 1
    large egg white, stiffly beaten
  • 1
    ml
    salt
 

Method

 
Whip the cream until stiff. Add condensed milk and mix well. Dissolve gelatine in the orange juice. Place bowl over a pot of simmering water and stir until dissolved. Add to the cream mixture and mix well. Add sherry and liqueur and fold in the crumbled peppermint crisp. Fold in stiff egg white and salt. Spoon into attractive dessert glasses or suitable dessert moulds and leave in the fridge to set. Decorate with crumbled chocolate and mint leaves, if desired. Serves 4.
