  • 240
    g
    white sugar
  • 300
    ml
    water
  • 500
    ml
    vodka or brandy
  • 2
    ml
    peppermint essence
  • few drops green food colouring
 

Method

 
Place the white sugar and water in a saucepan and heat until all the sugar has dissolved, stirring continuously. Boil for six minutes to form a thick syrup. Add the vodka or brandy, peppermint essence and food colouring, mix well and pour into a clean jar or bottle. Screw on the lid and store in a dark place for at least two weeks before using. Makes about 750 ml liqueur.
