    bolo, cut into thin strips

    cooking oil

    clove garlic, crushed
  • 2
    carrots, cut julienne
  • 1
    green pepper, cut julienne
  • 3
    baby marrows, sliced
  • 5

    salt
  • 2
    ml
    freshly ground black pepper
  • 2
    ml
    ground ginger
  • 30
    ml
    brown sugar
  • 30
    ml
    wine vinegar
  • 15
    ml
    soy sauce
  • 410
    g
    pineapple pieces, drained (keep juice)
  • 30
    ml
    cornflour
 

Method

 
Heat cooking oil in a heavy-based saucepan, and brown meat. Add garlic, carrots, baby marrow and green pepper and sauté. Add salt, pepper and ginger. Mix brown sugar, wine vinegar and soy sauce and add to meat, together with pineapple pieces. Mix pineapple juice and cornflour, add to meat and bring to boil. Simmer until sauce is thick. Serve immediately.
