Ingredients (6)

50.00 ml oil
4.00 sausages
1.00 onion — medium, chopped
1.00 red pepper — cubed
4.00 courgettes — thinly sliced
6.00 eggs — large

Method:

Heat half the oil over medium heat in a heavy-based pan. Add sausage and onion and fry until golden. Remove from pan. Add pepper and courgettes to pan and stir-fry for 2 minutes. Remove from pan. Beat eggs lightly in a bowl. Add cooked ingredients to egg and mix well. Season to taste.
Heat remaining oil in the pan and pour in the egg mixture. Cook over medium heat for 3-4 minutes. Place under a preheated grill and grill top of omelette for 2 minutes until firm. Loosen edges and put a plate over the pan, then invert, so that the omelette slips on to the plate. Serve sliced into wedges. Serves 4.
