Pepper and sausage omelette

    oil
  • 4
    country sausages, thinly sliced
  • 1
    medium onion, chopped
  • 1
    red pepper, cubed
  • 4
    courgettes, thinly sliced
  • 6
    large eggs
 

Method

Heat half the oil over medium heat in a heavy-based pan. Add sausage and onion and fry until golden. Remove from pan. Add pepper and courgettes to pan and stir-fry for 2 minutes. Remove from pan. Beat eggs lightly in a bowl. Add cooked ingredients to egg and mix well. Season to taste. Heat remaining oil in the pan and pour in the egg mixture. Cook over medium heat for 3-4 minutes. Place under a preheated grill and grill top of omelette for 2 minutes until firm. Loosen edges and put a plate over the pan, then invert, so that the omelette slips on to the plate. Serve sliced into wedges. Serves 4.
