Penne with rocket and vodka

    cans chopped tomatoes
  • 2
    ml
    sugar
  • 45
    ml
    olive oil
  • 2
    cloves garlic, crushed
  • 6
    fresh basil leaves, chopped
  • 2
    chillies, chopped
  • 450
    g
    penne noodles
  • 30
    ml
    vodka
  • 45
    ml
    rocket leaves, torn
  • 30
    ml
    cream
  • salt and freshly ground black pepper
  • Parmesan cheese, to serve
 

Method

Place the tomatoes, sugar, olive oil, garlic, basil and chillies in a saucepan. Bring to the boil, then reduce the heat and allow to simmer for 30 minutes until well reduced. Cook the pasta according to pack instructions. Add the vodka, rocket and cream to the sauce and simmer for 5 minutes until rocket is wilted. Season with salt and coarsely ground black pepper, then stir in the drained pasta. Serve immediately with Parmesan shavings.
