Penne with feta, lemon and parsley

    g
    penne
  • 3
    Litres
    boiling water
  • oil and salt for cooking penne
  • 2
    flemons, finely grated peel
  • 2
    cloves garlic, finely chopped or crushed
  • 250
    ml
    chopped parsley
  • 125
    g
    feta cheese, crumbled
  • 125
    ml
    black olives (optional)
  • 125
    ml
    olive oil
  • salt and milled pepper
  • extra olive oil (optional)
 

Method

 
Cook penne until al dente in the boiling water to which a little oil and salt have been added. Drain well though a colander and combine with remaining ingredients, except the extra olive oil. Serve penne warm, drizzled with extra olive oil, if desired.
