Penne pasta with tomato and whole kernel sweetcorn

    uncooked penne pasta (tubes)
  • 15
    ml
    olive oil
  • 1
    clove garlic, crushed
  • 1
    red sweet pepper, seeded and cubed
  • 50

    almond flakes
  • 410
    g
    tomato and onion mix
  • 5
    ml
    paprika
  • salt and freshly ground black pepper
  • juice of a lemon
  • 15
    ml
    finely chopped parsley
  • 200
    g
    frozen/fresh whole kernel sweetcorn
 

Method

Cook the penne pasta in rapidly boiling salted water until just soft.
Drain.
Heat the olive oil and sauté the garlic and sweet pepper until soft.
Add the almond flakes and stir-fry till lightly browned.
Reduce the heat and add the tomato and onion mix.
Season with paprika, salt and pepper, lemon juice and parsley.
Simmer till the sauce thickens slightly.
Add the sweetcorn and heat until warmed through.
Pour over the pasta and serve immediately.
