    spinach-flavoured penne
  • 50
    g
    freshly grated Parmasan cheese
  • 75
    ml
    mascarpone cheese
  • 50
    g
    creamy blue cheese, crumbled (you may want to use more)
  • 45
    ml
    olive oil
  • 1
    garlic clove, crushed
  • 30
    g
    fresh basil leaves
  • 120
    g
    rocket
  • 30
    ml
    grated lemon peel
  • salt and milled black pepper
  • 240
    ml
    sun-dried tomatoes in vinaigrette, drained (or oven-dried tomatoes)
 

Method

 
Cook penne according to packet instructions. Meanwhile put cheeses, oil, garlic and basil in a large saucepan and cook over very gentle heat until melted. Drain pasta, add to cheese mixture. Stir in the rocket and lemon peel, with plenty of seasoning, and cook until rocket has wilted. Serve with oven-dried tomatoes.
