Pecan and date loaf

    dates, chopped

    brown sugar

    pecans, roughly chopped
  • 1
    ripe banana, mashed
  • 15
    ml
    (1 tbsp) butter
  • 5
    ml
    (1 tsp) bicarbonateof soda
  • 250
    ml
    (1 cup) boiling water
  • 200
    g
    self-raising flour

Heat the oven to 190 degrees celcius and grease a loaf tin. Place all the ingredients except for the self-raising flour into a large bowland mix well. Sift the flour into the bowl and mix well once more. Spoon the mixture into the baking tin and bake for 45 minutes to an hour or until a skewer comes out clean. Remove the loaf from the oven and allow to cool for a few minutes. Turn the loaf out of the tin and leave to cool on a wirerack. Slice, spread with butter and eat warm.
