Ingredients (7)

500.00 g split peas — yellow or green
1.00 Litres stock
1.00 onion — large, chopped
4.00 bacon — streaky rashers, diced
15.00 ml butter
5.00 ml Worcestershire sauce
salt and freshly ground black pepper

Method:

Sort the peas, wash and then soak in water overnight.
Drain and place in a saucepan with the stock, bacon and onion. Simmer for 2 1/2 hours.
Drain off excess liquid and place in a bowl with the butter, Worcestershire sauce and seasoning.
Whip and then turn into a pudding basin. Press in and leave to settle. Once firm, turn out onto a serving dish and serve with corned beef and vegetables.
