Pears with blue cheese cream

    ml
    orange juice
  • 65
    ml
    brandy
  • 1
    lemon, juice
  • cinnamon stick
  • 2
    ml
    vanilla essence
  • 15
    ml
    sugar
  • 4
    firm, ripe pears
  • 125
    ml
    grated blue cheese
  • 125
    ml
    ricotta cheese or fromage frais
  • mint sprigs to serve
 

Method

 
Bring first 6 ingredients to boil. Halve, core and peel pears and add to liquid. Cook until just soft. Remove from liquid, cover and keep warm. Boil liquid over high heat so that it thickens slightly. Return pears to liquid while preparing cheese mixture. Mix blue cheese with ricotta to form a paste. Arrange pears on a plate, spoon over syrup and top with a dollop of blue cheese cream and a sprig of mint.
