Ingredients (10)

750.00 ml wine — red
500.00 ml sugar
1.00 Litres water
250.00 ml orange juice
10.00 ml orange — zest only
10.00 ml cardamom — crushed
2.00 cinnamon — stick
8.00 pears
To serve:
1.00 Litres ice cream — vanilla
0.00 christmas pudding

Method:

1. Mix all the ingredients, except pears, in a large saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil.
2. Add pears, reduce heat and simmer
slowly until pears are tender when
pierced with knife, about 25 minutes.
3. Transfer pears to a plate. Boil liquid in saucepan until reduced to 3 cups,
about 20 minutes.
4. Arrange 1 warm pear, a slice of Christmas pudding and 1 scoop of ice cream
on each of 8 plates. Drizzle some poaching
liquid over. Serve immediately.
