Pears poached in red wine

Ingredients

  • 750
    ml
    bottle dry red wine
  • 500
    ml
    sugar
  • 1
    Litres
    water
  • 250
    ml
    orange juice
  • 10
    ml
    orange rind
  • 10
    ml
    cardomom pods, crushed
  • 2
    cinnamon sticks
  • 8
    firm but ripe pears, peeled stems left intact
  • To serve:
  • 1
    Litres
    vanilla ice cream
  • Christmas pudding
 

Method

1. Mix all the ingredients, except pears, in a large saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil.
2. Add pears, reduce heat and simmer slowly until pears are tender when pierced with knife, about 25 minutes.
3. Transfer pears to a plate. Boil liquid in saucepan until reduced to 3 cups, about 20 minutes.
4. Arrange 1 warm pear, a slice of Christmas pudding and 1 scoop of ice cream on each of 8 plates. Drizzle some poaching liquid over. Serve immediately.
