Ingredients (6)

6.00 pears
600.00 ml wine — red
200.00 ml sugar
1.00 cinnamon — stick
3.00 cloves
1.00 star anise

Method:

Peel the pears, leaving the stalks intact, then slice a thin piece of the base of each pear so it can stand up in a saucepan.
Pour the wine into a saucepan large enough to hold the pears in a single layer.
Add the sugar and spices and stir over moderate heat until the sugar dissolves.
Increase the heat and bring the wine to the boil. Add the pears, turn down the heat to low and simmer for about 30 minutes.
Turn the pears in the wine so they cook evenly.
When the pears are just tender, remove them from the saucepan, using a slotted spoon.
Increase the temperature and boil the sauce, uncovered, over high heat until reduced by half. Pour over the pears and serve hot or cold.
